"Sencilla" means single (one bed). "Doble" can mean either two beds or one large bed — always clarify.

"Cama matrimonial" (matrimonial bed) is often used for a queen/king bed in Latin America.

"Me gustaría" (I would like) is another polite way to express a preference, interchangeable with "quisiera" in most situations.
